Carpaccio di manzo
Before being given the name of a delicious culinary dish, "Carpaccio" was the name of a great Venetian painter of the fifteenth century who was known for the subtlety of his palette. The inventor of the recipe, Giuseppe Cipriani, head of Harry's Bar in Venice, wanted to express the subtlety of this dish, of lightness and taste, whose beautiful deep red colour is reminiscent of the hues favoured by the Master.
